What Makes High Quality Ceremonial Grade Cacao Different

A deeper look at Criollo cacao from Guatemala
Not all cacao is the same. And not all cacao labeled “ceremonial” carries the same integrity.
At Maya Moon Cacao, high quality ceremonial grade cacao begins at the seed. We work with native Criollo cacao from Guatemala, a rare and delicate variety known as cacao fino or aroma fino. This type of cacao represents only a small percentage of global production, yet it is considered one of the highest quality cacao varieties in the world.
In the video below, we share the full journey of our ceremonial cacao, from cacao fruit growing on the tree to fermentation, sun drying, artisanal roasting, and hand preparation.
Why Criollo Cacao Is Considered High Quality
Criollo cacao is not easy to grow. The trees are sensitive to climate and require attentive care from farmers who understand the land. This careful cultivation is what protects the integrity of the seed.
Because of this delicate nature, Criollo cacao develops higher natural cacao butter content and balanced levels of theobromine, the active compound known for supporting steady energy and mental clarity. Its flavor is layered, smooth, and refined compared to heavily processed cacao products.

The Process That Protects Flavor and Benefits
High quality ceremonial cacao depends on more than genetics. It depends on process.
After harvest, cacao beans are fermented in wooden boxes covered with banana leaves. Proper fermentation activates natural transformations that shape aroma and depth of flavor. The beans are then sun dried for several days to reduce moisture naturally while preserving essential fats and minerals.
Once the cacao reaches our workshop in San Marcos La Laguna, each batch is roasted over firewood and peeled by hand. This small batch, artisanal method ensures that the natural cacao butter remains intact and that nothing is removed from the whole bean.
Unlike cacao powder or cocoa powder, ceremonial grade cacao is whole bean cacao. It is not defatted. It is not alkalized. It is 100 percent pure cacao with nothing added and nothing taken away.

Why This Matters for You
When you prepare ceremonial cacao properly, you are experiencing the full expression of the seed. Its texture, aroma, and steady energy reflect the care of the farmers, the fermentation process, and the artisans who protect it.
Choosing high quality ceremonial cacao is not only about flavor. It is about supporting sustainable cacao farming in Guatemala, preserving native Criollo cacao, and honoring the integrity of the earth and the people who cultivate it.
